Pavê de Chocolate: Popular Brazilian Desert

I made this desert for about 100 people riding and volunteering for The Third Street Grackles – a wonderful cycling group that I am proud to belong to. Pavê is a very popular desert in Brazil but have never seen it here… I received so many recipe requests from them and other friends who tried the desert that I decided to share it.


The beauty of this desert is that it can be versatile: There are tons of different flavors for it but my favorite growing up was the chocolate and vanilla. And the middle layer cookies can be soaked in simply milk or other variations.



Vanilla Cream/Layer:

1 can measure of regular milk

1 tsp vanilla

1 can sweetened condensed milk

2 egg yolks

2 Tbsp (tablespoons) corn starch

Chocolate Cream/Layer:

1 can sweetened condensed milk

3 Tbsp cocoa

2 Tbsp unsalted butter

1 can of Creme de Leite – same as Nestle’s Media Crema in Hispanic baking aisle in the U.S.

1 1/2 cups milk

½ cup Bailey’s or to taste

Optional for decoration: Chocolate shavings

In a pan, combine 1 can of sweetened condensed milk, same measure of milk, egg yolks, vanilla and corn starch.  Cook in medium heat at first then lower to med low once it starts bubbling. Cook until it achieves a thick creamy consistency – constantly mixing the cream so it doesn’t stick/burn. Reserve

In a different pan, mix the 2nd can sweetened condensed milk, butter and cocoa and cook in medium to low heat (same process as vanilla cream) until it forms a thick consistency – also continuously mixing. Take it off the heat and add the can of creme de leite to the chocolate cream and mix well.

To assemble:

Place vanilla layer in a rectangular glass dish. Dip the cookies in the milk/Bailey’s mix, let it soak a bit and place cookies over the white layer.

Top cookies layer with the chocolate cream. Repeat assembly above if you use a smaller dish. You may double the cookie layers with chocolate cream in between.

Top with shaved chocolate (optional) and freeze it overnight or for at least 2 hours before serving. Enjoy!
