Thought I’d be bombarded with chocolate cake orders for this Valentine’s Day season. And it happened, but gluten-free carrot cakes/cupcakes were just as popular. Since, I’ve posted so much about my insane Brigadeiro Chocolate Cake, thought I’d feature the carrot cake on this post. Even though it’s gluten-free, it’s as tasty as the regular with roasted walnuts, coconut and crushed pineapple. So yum, my 13 year old son asked me to bake one for him too: “Mom, I LOVE your carrot cake!”
