This weekend I was extremely busy baking gluten free cakes for my friends who are gluten intolerant/have celiac. I’ve tinkered with the recipe, finally succeeding in creating a gluten free banana cake/bread that’s as good as my original. It’s fluffy, moist, and so not like the usual gluten free baked goods.
The Brigadeiro Chocolate cake was also tinkered – using too much almond flour in past cakes, I have replaced most of it with brown rice and white rice flours. The result: Devine! The birthday girl didn’t want to share any – Ha!
